Michael Shaps Chardonnay 2013

Made with grapes from the Wild Meadow vineyard in Loudon County where the cooler climate allows for fully ripe grapes that retain their acidity. This wine undergoes native primary and malolactic fermentation in barrel, and it is aged for 11 months in 100% French oak, 33% new, with twice weekly battonage (lees stirring) during the partial malolactic fermentation. The result is a wine with richness, weight, and length balanced by the acidity. It's structure gives it a long life expectancy, and it develops additional layers, texture and flavor as it rests in bottle.

Michael Shaps Petit Manseng 2014 $30 Our Petit Manseng 2014 won a Gold medal at the 2016 Governor's Cup wine competition and was also chosen for the Governor's case. From the Honah Lee vineyard, this is fermented mostly in French oak barrels, one-third new, with a small percentage in stainless steel tank, and was bottled after six months of aging with no malolactic fermentation. It is bone dry, but brimming with the sweetness of  tropical fruit notes, and is full bodied and very concentrated. Made possible by our unique growing conditions, this style of wine is specific to Petit Manseng grown in central Virginia.

Our Petit Manseng 2014 won a Gold medal at the 2016 Governor's Cup wine competition and was also chosen for the Governor's case. From the Honah Lee vineyard, this is fermented mostly in French oak barrels, one-third new, with a small percentage in stainless steel tank, and was bottled after six months of aging with no malolactic fermentation. It is bone dry, but brimming with the sweetness of  tropical fruit notes, and is full bodied and very concentrated. Made possible by our unique growing conditions, this style of wine is specific to Petit Manseng grown in central Virginia.

 This vintage of Meritage is anchored in Merlot, complimented by Cabernet Franc, Petit Verdot, Malbec and Cabernet Sauvignon. The goal is always to produce a concentrated and deep wine, highly complex in both aroma and flavor, with the capacity to age for ten years or more. The blend changes with each vintage as we pull from the most successful lots to achieve this goal. It is aged for two years in all French oak, 50% of which is new.

 An assemblage from two different vineyard sites in Albemarle County. This wine underwent a non-inoculated fermentation on the skins for close to a month and then racked to French Oak (50% new) for malolactic and close to two years of aging. It shows multifaceted aromas, from dark fruit character to the more elemental, and is full bodied, structured, and highly ageable.

Grown in the Cote Chalonnaise. The vineyard site produces a more fruit-forward style with lively citrus and pear notes. The wine is made in neutral oak and aged for six months prior to bottling.

Maison Shaps 2009 Meursault 1er Cru Les Charmes

A very limited production from one of the most famous sites in Meursault.  Les Charmes is barrel fermented with 50% new oak to balance the weight and viscosity. The viscosity and oily character of this wine is intertwined with mineral notes. The complex aromas and flavors are unique and produce a wine that needs five years to developing the bottle.

Michael Shaps Viognier 2015

These grapes were grown at Honah Lee and Adventure Farm Vineyards under Michael's supervision. 100% stainless steel, native yeast fermentation. The grapes were crushed, as we do in red winemaking, and left to soak on the skins for 12 hours to capture the essence of the grape. The result is richly textured, aromatic, and layered with the flavors of citrus, stone, and tropical fruits.

 A blend of Petit Manseng, Muscat, Riesling, Chardonnay, and Viognier fermented in stainless steel tanks and a variety of older French oak barrels. Finished dry, it is subtle and structured when young and starts to truly blossom aromatically and texturally after a year in bottle. It shows ripe fruit, honey and flowers on its medium bodied, persistent frame. This wine is named in honor of Michael's mother, who was a talented artist and the inspiration for this unique blend.

Michael Shaps Merlot 2010 (Sold Out)

This wine resided on the skins for a combined 28 days between cold soak, non-inoculated fermentation, and extended maceration before it was pressed and racked to barrels (50% new French oak) for malolactic fermentation and 21 months of aging. It is medium bodied, and the velvety texture of this Merlot is complimented by aromas and flavors of dark, berried fruit and wood spice.

Our Pinot Noir is grown at two different sites in the Haute Cote de Beaune.  Both sites provide fresh red fruit notes and moderate structure.  We ferment the Pinot to full dryness on the skins with extended post fermentation maceration. The wine is aged in neutral oak for nine months prior to bottling.  We look to bring out bright red fruits with moderate tannins and to produce an easy approachable wine.

This unique wine won a Gold medal at the 2015 Governor’s Cup wine competition and was also selected for the Governor’s Case.  The 2012 Raisin d’Être (a play on words) is our way of replicating a traditional late harvest wine.  Similar to late harvest wines where grapes turn to raisons while still hanging on the vines, we salvaged tobacco drying barns from Southside Virginia for use in a similar drying process, but where the drying process takes place in the barns, not on the vines.  Utilizing fans and heat to dry the grapes out (thus “raisin” not “raison”), we are able to create a unique dessert wine with highly concentrated fruit.

Michael Shaps Cabernet Franc 2013

From a small block on Carter Mountain farmed under Michael's supervision, this Franc resided on the skins for a week during cold soak, through the non-inoculated fermentation, and during a multi-week extended maceration. Malolactic fermentation was conducted in barrel (50% new, 100% French), and it aged for 20 months before bottling. The result is medium bodied and long with classic Cabernet Franc aromatics of red/black fruits and herbs framed by the spice and texture of the oak.

The site, Vaumuriens – Haute, is known for having a deeply concentrated structure with big aggressive tannins and bold acidity, we think that our Pommard exhibits the true essence of this great appellation.  We balance out the wine with 30-50% new oak in each vintage to help build weight and balance and structure the wine for long-term aging.
